Crescentina (Tigella) di Modena

It is the Modena mountain dish par excellence, ancient mountain bread, circular in shape, obtained from a skilful mixture of flour, water and salt

Product features

Immerse yourself in the heart of the Modenese Apennines with Crescentina, an authentic culinary treasure. This round focaccia, simple but rich in history, is born from the union of flour, water, and salt. Also known as Tigella, from the historical cooking utensil, this bread is wrapped in chestnut leaves to absorb unique aromas, then cooked near the fire on decorated clay disks, once a sign of nobility. Today, Crescentine captivate palates with their crunchy exterior and soft interior, perfect to enjoy with cold cuts and cheeses, keeping alive a tradition that has slipped from the mountains into our kitchens, warming convivial moments with a flavor that speaks of home and traditions.

Culinary Uses

Traditionally, it is consumed hot, split in half, and filled with "pesto," a mixture of lard, garlic, rosemary, and grated Parmigiano Reggiano. It can also be enjoyed with any type of cold cuts and soft cheese, and Crescentina does not shy away from hunter-style sauces and, even as a dessert, jam or hazelnut cream.
